to water load: 3 gallons on monday, 2.5 on tuesday, 2 on wednesday, 1 on thursday, cut food noonish on thursday, cut your water at 7pm thursday, for a 3pm weigh in on friday. ('bout 20 hours before the weigh in you cut the water)

dehydrate with a sauna or hot shower, do 15 minute sessions in the heat, then 5 minutes out, make sure you occasionally rinse off to get the salt and stuff off your skin so you can keep sweating.

make weight, then rehydrate aggressively, i do 1 gallon in the first 30 minutes after making weight, 1/2 water 1/2 gatorade.
then salty foods and more liquids until you get all bloated.
you can yo-yo about 7-10% of your bodyweight in water weight easy.

Yeah I've seen it work both ways and I've used it both ways.
The 3 gallons on wednesday seems to be more of a flush, and a more rapid loss, but with less actual weight loss. When I've been close to my weight class limit I've done that where I drink 3 gallons the day before my cut and I'll drop 4-6 pounds without any other effort whatsoever.
The 3 gallons on Monday seems to drop more weight, but it takes longer, so if you need to drop more weight, I'd suggest more water early and then taper off.
Though I have seen equally good results with the same amount of water per day for each of the loading days.
The basic principle is you want to oversaturate your body, then completely cut salt, carbs and water and your weight will suck down as your body sheds water and minerals. Once weight is made you rehyrdate quickly and completely and you'll feel just fine.

you didn't do any loading did you? so your body went straight into "I'm in a desert and need to hold onto every ounce of water I have" mode.
