Are you able to do anything like coconut flour or almond flour? There are a ton of recipes out there for breads and side dishes that use these in place of regular flour. Carbs will be depending upon the recipe, of course, but it might be worth a shot.

Check the free-from section for gluten free food. Things like pasta and bread replacements.
Uncontaminated porridge oats, quinoa and rice could be suitable sources of carbs for you. As well as fruit and vegetables. It may be worth checking out the list of Safe Gluten-free foods on celiac dot com for more ideas, as there are plenty on there!Going for gold :)

There's a ton of good gluten free products out there, but as with anything there is a lot of crap too. I stick to quinoa (you can prepare it with all kinds of different seasonings so you don't get sick of it), white sweet potatoes, regular sweet potatoes & red potatoes, as well as GF oats. I've eaten so much rice in my life before I was aware of other GF foods that I'll be happy to never have to eat it again unless it's sushi
