Just tried the bread pudding, pretty good. I added two packages of Stevia and a little cinnamon. Then I made a thick paste, like a glaze, using my banana protein powder and poured it over the top, yum!

Egg Roll-Up
I really wanted to make leejiayun's tuna eggrolls (http://forum.bodybuilding.com/showpo...93&postcount=1), but couldnt wait til this weekend so I made my own variation of the recipe with what I had. Since breakfast is my favorite meal of the day, I stuck to my morning staples: coconut oil, whole eggs, broccoli, feta, light cream, and salami meat
Verdict:
great egg variation for those getting bored of the same old omelette routine
tastes especially great with coconut oil
easy to roll up without falling apart
mixing the feta into the egg mixture turned out really really good
overall a very filling and satisfying meal
Egg Roll-Ups
Ingredients:
2 eggs
1/2T coconut oil
.5oz feta
1 oz salami
1T light cream
3oz broccoli
*Notes: I wanted to try something a little different, and instead of using the feta cheese as a topping, I put it IN the egg mixture before frying it on the pan. It made the egg "wrap" taste so good!
*feel free to use your own variation of ingredients as well as how much of each, this is just what I had on hand and I usually like a 400-500 calorie breakfast
Directions:
Mix together eggs and cream (opt. to add feta or other cheese)
Melt coconut oil in pan
Pour egg mixture on pan, cook for a few min while making sure to distribute the mixture to make like a large pancake - then flip
Once egg is done, move to a plate
Fry up the meat and veggies in the same pan
Distribute meat and some of the veggies in egg mixture, roll it all up, and cut in half!

1/2 cup Breyers carb right Chocolate ice cream (4 net carbs)
1/4 cup unsweetened almond milk
1 tsp almond butter
cinnamon to taste
pork rinds and ice cream? yes, i'm serious

Cheesy Beef Bake
Decided to try out this recipe originally posted in the 'keto recipes' forum....http://forum.bodybuilding.com/showth...hp?t=133626511
Verdict:
I have to admit, I haven't tried this yet as it is late at night... but I will be having this for lunch tomorrow Smells delicious though!
I made a few changes:
omitted salt and red bell pepper
added 4oz broccoli
added an extra 1/4 cup egg whites
Original recipe:
Cheesy Beef Bake
A quick toss-together and bake meal that's great for hungry families.
Ingredients
5 large eggs
1 dash pepper
1 dash salt
1 cup frozen spinach, chopped, thawed & drained
1/4 cup chopped red bell pepper
1 lb lean ground beef
4 oz fat free cheddar cheese, shredded
Directions
Preheat oven to 350 °F (175 °C).
Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
Brown ground beef. Drain well.
Add chopped red bell pepper and chopped spinach to ground beef and mix together.
Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.
Macros:

i just made this again using 2 chopped up salmon patties instead.

French Toast Grilled Cheese Sandwich (OH YEAH)
My two favorite bread meals ever! French toast and Grilled cheese... put them together and BAM! delicious
Now, unfortunately you have to have the 0g carb bread in order to make this, so I suggest you buy some right now!!
http://www.lindasdietdelites.com/die...bread-106.html
I got a loaf of the cinnamon bread and its delicious - my next order I will get another and some plain bread as well
Net carbs: <1g
Verdict:
This bread is so close to real bread its hard to describe it any better than that lol
Since I decided to make this a french toast version of a grilled cheese sandwich, the end product is a little eggy and firmer once cooked which gave the bread an excellent texture!
Since I only got one version of this bread, I'll admit that the sweetness of the cinnamon and salty combination of the meat, cheese sound a little strange, but it was actually very very good I'm so full and satisfied I'm happy I thought this up to make for lunch haha
FTGC Sandwich
Ingredients:
1 egg
1 T heavy cream
2 slices 0g carb bread
.5 oz salami
1 slice cheese (I used American)
Directions:
Heat pan and spray with pam (you could use oil or butter if you wanted I'm sure)
Scramble 1 egg in a bowl and mix in heavy cream
Coat both slices of bread with egg mixture completely (will use all of the egg mixture)
Fry both slices on the pan and flip when bottoms are golden brown
Place slice of cheese and salami (or other meat of choice) on one slice of bread
Top with remaining slice of bread
Let sit for another minute or two on both sides to melt the cheese
Macros: 342 calories, 20.9g fat, 14g fiber, 14.7g carbs, 24.2g protein

Keto Salmon Burger (WITH A BUN)
As some of you may know, I recently received my order of low-carb goodies including 2 different bread products and I just had the chance to use the hamburger buns tonight. Well, in my opinion they taste SO great! They aren't as soft as regular buns, but for 0g net carbs, these are absolutely perfect to fill me up (17g fiber!) and make my burger more satisfying

So, for tonight's dish...
I bought the salmon patties pre-made from Whole Foods so I just fried it up in a pan and topped it with a slice of monterey jack cheese, jalepenos, some kale - and of course paired my burger with some broccoli

In for later Shepherds Pie recipe, its been so long after i read you have one im now craving it.
I just started Keto yesterday, and am excited honestly because im a huge fan of fatty meats like Pepperoni and Salami but always cut those out.
I've noticed that none of the recipes use the Shirataki Noodles in dishes that would traditionally use noodles(like your mac & cheese)...any particular reason?
I tried some a few weeks ago, once rinsed off they made a pretty damn fine noodle replacement.Last edited by FuzzeWuzze; 04-22-2011 at 02:47 PM.
