    chili cookoff recipes?!

    Something that's serving size and directions is made for a crockpot. Have a chili cookoff at work on Friday and I signed up for it but I've only made plain chili a couple times and never tried anything special.

    About 500g ground beef
    1 can chopped tomatoes
    About 50g tomato puree
    1 can of kidney beans
    1 large onion

    Fry up the onion and beef, when cooked through add cayenne pepper and cumin to taste (salt too, but not too much, the puree will take care of that), add the tomatoes, puree, and kidney beans. Simmer until you're too damn hungry to wait any longer.

    This is the best traditional chili recipe I've seen. You can cook it in a regular pot then reheat it in the crock pot for the comp.

    It's got a bit of a kick depending on the type of hot pepper you use but it's not what I consider a HOT chili. One thing they don't call for is beans. I always add beans.

    Edit: This recipe also doesn't call for much tomato juice...I usually add about 16-24oz.

    15oz can crushed tomatoes
    1 diced bell pepper
    2 diced onions
    2 cloves minced garlic
    2 diced celery stalks
    2 cans beans (any you like)
    1 tsp cumin
    2 tbsp chili powder
    1 tsp black pepper
    1 tsp salt (more to taste)

    desired amount of stewing beef or chicken

    Put it on low for 6-8 hrs. If I use chicken, then I'll add that for the last couple hours, with beef, I leave it in for the whole time to soften up.

    Don't forget loads of chili powder and cayenne pepper.

    I use:

    1 lb lean ground beef
    1 8oz can tomato juice
    small onion diced
    couple garlic cloves
    about 5-6 Tsp of chili powder
    1-6 tsp of cayenne pepper depending on how hot you want it
    beans of your choice (i use pinto)

    Brown beef
    cook beans in crock pot
    ad all ingridients together after beans are cooked and simmer for about an hour
