Ok...I know that it's not a good idea to have fat and carbs in the same meal...
SO....does that mean if I have one chicken breast(11g Fat) with a certain amount of brown rice, which I think is carbs...that would be a bad thing?

Dude, skinless boneless chicken breast only has like 1.5g of fat per serving, so I would suggest that you stop cooking it in all of that crap. What I do is just chop up 2 breasts into tiny pieces and add it to what ever carb source I feel like eating that day (yams, brown rice, whole wheat pasta), and it tastes great without all the added ingredience. But to answer your question, you should try to keep your carbs and fats as seperated as you can.
