I love cheese. I get FF slices, cottage cheese and veggie slices when I need more fat. But all the FF cheeses (even cream cheese) are ablut 2/3 protein or better (esp. CC).

The fat free cream cheeses and fat free sour creams are GREAT for making cream-style sauces (I like thickening chicken broth with the fat free cream cheese or sour cream and putting lots of garlic in it). A wicked sauce that should be (and tastes like) 900 cals is actually like, 30.
And with the fat free cheese slices, you're right they don't melt very well. If you rub one or two droplets of olive oil across the top of the cheese slice and THEN let it melt it makes a world of difference. And it makes it taste better.
