Bought a Crockpot - Now What? (Beef Stew Recipe?)

I went to the store today, found a decent crockpot for $20.

After that I headed to the grocery store, found 1.8lbs of Angus Beef for Stewing on sale, also got some russet potatoes, carrots, celery, tomatoes, and a yellow onion.

I would like to make a thick stew tomorrow, can anyone give me a good recipe?

That's all you need. Chop up all the vegetables & beef before tossing it in your crockpot. Maybe add garlic, bay leaf, fresh parsley, or scallions (green onion) for flavor. Salt/pepper to taste.

Would beef stock be an acceptable base for the stew??

If you want to cook a turbo stew, sure. You could use a beef stock as the base and cornstarch to thicken it up. It's not necessary if you slow cook because the natural juices from the beef will release & combine with the flavor of vegetables to make an awesome gravy. If you cook it long enough, the potatoes will soften to thicken up your stew as the liquid reduces.

I only use stock for cooking soups, but use whatever works for you.

    Here's one of my favorites:

    Pork roast (trimmed & cubed)
    3 large, red apples (diced)
    1 large onion (diced)
    2 turnips (chopped)
    2 large potatoes (chopped)
    1/2 bunch celery (chopped)
    1 green bell pepper (chopped)
    1 clove garlic (minced)
    fresh parsley (diced)
    salt
    pepper
    pinch of cayenne
    paprika

My chef at the hotel I work at hooked me up with this beef stock made from veal, he said it's expensive and tasty, I am going to use like 1/2 a tbsp just for a little bit of flavor.

Someone said I should layer the veggies, with the meat on top of everything?

    BEEF STEW
1 lb. lean boneless beef stew, cut in sm. pieces
1 sm. can potatoes, sliced or whole, drained
    1 can sliced carrots, drained
1 can cut green beans, drained
    1 onion, chopped
1 can cream of mushroom soup
1 can cream of celery soup
    1 can tomato soup

Place the above ingredients in a 5 quart crock pot, stir slightly and cook until done. Serve alone or with rice.

This soup makes the gravy and there's no need to thicken it. One Caution: Don't substitute fresh potatoes for canned as they will become mushy. This is good to put on in the morning before leaving for work so that dinner is ready when you return home. All that's left to do is cook the rice and heat your bread.

    CROCK POT BEEF STEW

1 beef bouillon cube dissolved in 1/4 c. hot water
    3 carrots, sliced
    3 potatoes, cut into quarters
    1 onion, sliced
    2 celery stalks, sliced
1 lb. stew meat, cut into sm. chunks & covered with flour
    1 can Campbell's vegetable soup
    Water

Put everything in crock pot and add water to the top of the veggies. Turn on crock pot to low in morning. When you get home, add 1 can of Campbell's vegetable soup. Stir and it's done.

    BEEF STEW #3
    RECIPE INGREDIENTS:
1 large onion, halved and thinly sliced
2 medium carrots, peeled and thinly sliced
2 large potatoes, cut into 1/2-inch chunks
1 to 1 1/2 cups peeled and diced rutabaga (about 1/2 small rutabaga)
1 cup fresh green beans, in bite-size pieces
    1 pound beef stew-meat chunks
    1 bay leaf
    1/2 teaspoon dried thyme
    1 clove garlic, crushed
    3 cups low-sodium beef stock
    2 tablespoons light brown sugar
    3/4 teaspoon salt
    2 teaspoons Worcestershire sauce
    Pepper to taste
    3 tablespoons all-purpose flour
    2 teaspoons tomato paste
    1. Put everything but the flour and the tomato paste in a slow cooker; stir to combine.

    2. Cover and cook on the low setting for 8 to 9 hours or on high for 4 to 5, until the beef is tender and the potatoes are just fork tender.

    3. Stir the stew once or twice as it cooks, if possible. About 30 minutes before serving, transfer a ladleful of the broth to a small mixing bowl.

    4. Add the flour and tomato paste and whisk until smooth. Stir the mixture into the stew and cook for the remaining half hour. Makes 6 to 8 servings.
    Nothing is, everything is becoming.

Is it really necessary to add beef stock? Would water be fine, or would it drastically water down the stew?

Not required, but adds another layer to the depth of flavors.

    Crock Pot Chicken

    4 large chicken breasts
    1/4 cup lemon juice
1/2 cup water (or chicken stock if you have)
Minced or chopped garlice (as much as you like)
Mrs. Dash onion & herb seasoning
    Ground black pepper

Throw chicken breasts in CP, add liquid, finally season top of chicken with your spices. Set to "low" before you leave for work and it will be perfect by the time you get home (approx 8hrs). Cooks up perfectly everytime And of course you can change around the seasonings for your own tastebuds!

I make this pretty often and have some ready right now in fact:

Find stew meat (or even chicken breast) and if it is not properly cut, then take a knife to it and cut off any visible fat prior to cooking, potatoes (whatever variety you like), celery, mushrooms, bag of frozen peppers and onions and packet of Lipton's recipe secrets soup)

You can just dump the meat in the crockpot or else you can pan fry it so there is no question about killing pathogens with adequate heat.

Then you can find some potatoes you like (whatever variety you like). I usually get a mix of a sweet potato and either some red potatoes or idaho potatoes. Another option is to just find these in the freezer section and dump it 1/3 of the bag.

Then add in whatever veggies you like such as celery, mushrooms, onion, etc.

I personally just grab a frozen bag of something like this:

    or

and packet of Lipton's recipe secrets soup

    and you get this:

If you decide on using any of the frozen veggies, I suggest you let them soak in cold water for 5 minutes and dump and soak in fresh cold water again for 5 more minutes, then dump and then add to the crock pot as this will thaw the veggies out before they are added to the crock pot. I personally add my Lipton soup mix in first with a bit of water and then the meat and then the veggies, and cook on high for an hour or so and then turn it down and stir it once and go to bed.

I don't know if you'd call this a stew, but I fill mine with veggies. Broccoli, cauliflower, asparagus, zucchini, squash, sweet potato, and bell pepper. 100g of each. 1 cup of water. A serving of brown rice and black beans. Then top with either chicken or beef. I let it cook on low overnight and eat like a king at work the next day.

    Beef or Turkey Chili:

2-3 pounds of ground beef or turkey, browned in a frying pan and drained
1 can crushed tomatoes (28 oz)
1 can diced tomatoes (drained, 28 oz)
1 16 oz can of kidney beans
1 16 oz can of pinto beans
    3-5 cloves of garlic, diced/minced
    1 bell pepper, chopped
    1 white onion, chopped
    Salt, pepper to taste

    Serve that over jasmine rice

A lot of guys also like doing pulled chicken in the crock pot with a bunch of chicken breast and sweet baby ray's BBQ sauce. You can eat it on a plate with some potatoes or on a bun.

    Balsamic Pot Roast

    3.5 lbs rump roast
    2 cups beef broth
    2 cups baby carrots
    6-8 russets
    2 garlic cloves
    1 yellow onion
    4 tbsp butter
    1/3 cup balsamic vinegar
    1/2 tsp Rosemary

Slow cook it all day. If you like balsamic vinegar, you'll love this twist on traditional pot roast.
