Got this recipe from genaw.com/lowcarb (its a very good website for low carb recipes!) After making a lot of different low carb fudge recipes, i found this one to actually be AMAZING!! Very hard to stop eating.
1/2 cup all natural peanut butter
1/2 cup unsalted butter
2oz. cream cheese
1 cup granular splenda (or equivalent liquid)
2/3 cup (2 scoops) vanilla protein powder (chocolate is good too)
1 tsp vanilla (optional)
Directions:
Melt the peanut butter and butter in microwave for 1-2 minutes; whisk well. The add cream cheese and blend until smooth. Next add your splenda and blend again until smooth. Last put your protein powder and vanilla extract (if you are using it) and blend until mixture is very smooth. Then just find a pan or whatever you want to use and pour it in there. Put it in the freezer (fridge will work but is more sloppy when you try to eat it) and wait about 30 or so mins...Enjoy!

Per piece: Cals->105 Fat->9g Carbs->3g Protein->4g
If you use liquid splenda: Cals->101 Fat->9g Carbs->1g Protein->4g
