This is a slight variation from a recipe on Kraft Foods' website which I made this morning. It's really good.
Ingredients:
4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp. Grated Parmesan Cheese
2.5 or 3 lbs of chicken breasts pounded to ?"
1 egg
1. Heat oven to 375 degrees Fahrenheit.
2. Mix the cream cheese, spinach, 1 C of mozzarella, and 3 Tbs. of parmesan cheese together.
3. Lay the chicken breasts flat in a pan and divide the cheese/spinach mixture evenly on top of each chicken breast.
4. Roll each breast from end to end, and secure as a bundle with toothpicks.
5. In a separate bowl, beat the egg.
6. Dip each chicken bundle in the egg (or brush the egg on to the chicken bundles evenly) and place the bundles seam-side down on a lightly oiled baking dish.
7. Sprinkle the remaining 3 Tbs. of parmesan cheese and ? Cup of mozzarella cheese over the bundles.
8. Bake for 30 minutes or until the chicken is done.
