Lemon Posset
This is such a simple dessert to make and tastes great
This will be enough for 3 small servings as it's quite rich
Ingredients
1 lemon
300ml double cream
5 tbsp splenda
Method
Remove the zest from the lemon with a fine grater and squeeze out the juice, put aside
Pour the cream and Splenda into a small pan, bring to the boil and simmer for 3 minutes
Remove from the hob then whisk in the lemon zest & juice, whisk for a minute or so to help quicken the cooling , pour into 3 small ramekins
Place in the fridge for about 3 hours, enjoy
Nutriton will be around 450kcal per serving and around 3 carbs (best to calculate from your own ingredients)
