1 egg
2 tbls soy bran
1 tbls psyllum husks
1 tbls cocoa powder.
1/2 tsp baking powder
Good shake of cinnamon
3 tbls water.
Sweetener.
Mix everything to a wettish texture,
Divide into four muffin molds
Bake for about ten minutes (maybe 12) at gas 6, 200C.

It's a type of bran you can buy in health food shops, nice texture for this sort of thing. I've made it with wheat bran, but it's pretty chewy like that.
Or you could use a spoonful of flaxmeal instead of a spoonful of bran. The bran just keeps the cals down.
The psyllum husks make it slightly sticky so it all stays together instead of falling apart into a pile of bran.65% fat, 30% protein, 5% carbs = keto.
