    Low carb canolli!

Hey, this recipe hit me tonight when I was looking for something sweet to fill in my fat macro, and this did just the trick.
    What you need:

Ingredients for your favorite low carb crepe, for me that's:
    1 Whole egg
    1 Tbsp Heavy cream
    Cinnamon
    Splash of vanilla

    And for the filling:
    1 Tbsp Marscapone Cheese
    1 tsp artificial sweetener
(Another tbsp of heavy cream if you like your filling a bit runny)

    Pretty simple to make
    1. Mix ingredients for crepe in one bowl, and filling ingredients in another
    2. Heat up a pan on med-high heat, coat with butter or non-stick spray.
    3. Pour crepe mix in, let cook until you can see bubbles coming through the top of the crepe.
    4. Flip carefully and let the other side cook for about a minute.
    5. Put it on a plate and either let it cool before putting in your filling, or enjoy it warm and let the filling melt inside of it.

Yeah, it is extremely easy to make, I hate recipes that need like 15 different ingredients like the ones on genaw because you usually have to plan ahead. This recipe can be made from things all ketoers should have.

I've only had a canolli once to be honest, are pistachios good with them? Feel free to add whatever you like and tell me how they come out.

If you can get ricotta soprafina, get it. Real canollis (as in the ones you get in Brooklyn bakeries) are made with ricotta soprafina. That stuff in your supermarket won't work, it has to be the really really fine stuff (no, you can't blend the basic supermarket brand either).

I used regular full fat ricotta (not the suprafina) instead of the marscapone and ate it for breakfast. I liked it. Gave it to hub as well and he was happy not to have eggs! Thanks for the great recipe!
