    Good almond butter recipes?

i wanna make it homeade i figured this is the right section to go to considering there's very lil carbs in it..
does it come out good just putting a bunch of almonds in the food processor..should i toast the almonds? or does that cause them to lose nutrients?

your gonna want to roast the almonds first before anything. a food processor should be fine. add them in a cup at a time. just let them process until they are ina paste like form. it could take a little while so be patient

you dont have to roast them it depends on your preference, actually if you soak them for 12 hours in water (a 2:1 ratio) it opens them up making it better to make almond butter with, as far as oil yes you want to add 2-3 tbl, or a bit more depending on your preference of how creamy you want it, you can do it in the food processer or blender.

i find its better without adding oil. Just let them blend until the natural oils come out and it becomes the right consistency... eventually it will happen, just keep blending.

if you have a high quality coffee/spice grinder, you can use that. but i've been wondering lately if it's worth investing in a high-powered nut butter machine. they don't seem to be terribly expensive, if you really, really enjoy fresh nut butter...
