I saw a few threads on keto chessecake recipies but couldnt find some of the ingredients at my local store so I decided to get creative and alter the recipe to suit waht I had. here's what I came up with.
8 oz cream cheese (softened in microwave for 30 sec)
4 tbsp PB
1 egg
1 tbsp cocoa powder
1/4 cup granular splenda
splash vanilla extract
put this into muffin tin and topped with two dark choc chips on each one. baked at 350 for 20 mins.
They turned out great, and are even better with a small squirt of redi whip
