    Mexican "Rice"

    1 small head of cauliflower
    1/2 cup of onion
    3 tbl of butter
    1/2 cup low carb salsa
    salt, pepper, and garlic to taste

    grate your cauliflower into a bowl, (use the bigger grate side for more of a "rice" look) add 4 tbl of water, cover bowl with a plate and put in microwave for about 4 min, checking every min, until cauliflower is tender but not mushy. heat up 3 tbl of butter in skillet add chopped up onion, cook till transclucent. add cauliflower and seasonings and salsa, stir around till evenly blended, cover for 3-4 min, until its soft but not mushy. ENJOY! Im eating this as im typing it up, if you didnt know any better you would think this is real honest to god rice. i hope you guys like it, oh and credit for the recipe goes to http://www.genaw.com/lowcarb/mexican_rice.html
