    Greg, I don't follow a recipe, so here is what I do.

    In a large mixing bowl:

    Bake two packages of chicken legs, de-bone, chop to desired size. For MT: If you prefer, substitute the chicken with some fresh nutria
    1 large onion
    1 large can of Ro-Tel and you can add more jalapeno or even a pablano
    2 cans of Cream of Mushroom Soup
    3 or 4 cups of black beans or beans of your choice
    From baking the chicken, you should have some good chicken broth. I bake the chicken the day before so when I put the chicken broth in the fridge, the fat come to the top and I scrape off. Add a couple cups of the broth
    Couple cups of shredded Mozzarella cheese or Cheddar or cheese of your choice
    Salt and pepper to taste
    Mix very well

    In a large and deep baking dish, make a layer of the mixture on the bottom of the dish. Then, a light layer of low-sale Fritos (regular is way too salty), repeat until the dish is full. I put a layer of Panko bread crumbs and Fritos on top.

    Pre-heat oven to 345F and bake for 1 hour 15 minutes.

    Halibut is probably the most expensive fish that the supermarkets carry around my town.

    This is a shot of 6 buttermilk biscuits made from scratch this evening - out 20 total. Came out nice. Yes, they are kind of square because I cut them with a knife instead of a round cutter. Round biscuit cutter tend to gum up and a knife cuts clean. They will be part of my Thanksgiving dressing recipe I mix with cornbread and veggies.

    Okay, as promised, here's a pic of what Lebanese/Turkish meat pies ("sfiha") look like. I tried to find pics on my phone of ones I bought, but I must have deleted them. But they look identical to those in the pic. I'm part Italian and Middle Eastern, and so far, Italian food is way easier to make lol ME food requires that perfect blend of spices, and I can't quite get it right.



    And here's breakfast for this morning, that I made - Ezekiel french toast and fresh blueberries.

    Yea, ME cuisine can often be very simple as many regions live modestly. I’m part Iranian and a simple breakfast is a small pita bread (best to buy homemade if you can find a good ME market) with some basic apricot or fig jam. (I buy mine from a market where’s it’s imported from Turkey)

    Common things to cook with are saffron, yogurt (homemade is best), tahini and lamb. Mint is also pretty popular in some dishes.

    There’s a lot of overlap with Greek dishes too so if you like Greek food, chances are you’ll like ME cuisine.

I happened to be near and went over and I asked what that was and he said it was catfish. I asked, "In pasta?" He said, "Yeah." I said, "I'm not eating no catfish spaghetti." ...and I didn't He said, "We have it all the time." OMG

    It reminded me of the 'O Brother, Where Art Thou' scene where they were eating dinner and the guy in middle of them eating, said it was horse meat. Grrooosss

    @Mark - for some reason, I couldn’t quote you on my phone. Re: lamb. lol Yea, you can replace it with beef but the lamb is usually ground with spices and it just tastes perfect with certain dishes.

    I don’t think I’d like catfish with spaghetti, either. -_-

    Most of our grocery stores carry salmon. A couple have decent seafood selections for a small inland town.

    I eat as much fish as possible. The sockeye salmon has a little darker meat than regular salmon and is also more expensive. The regular salmon tastes a little better IMO. I try to find wild caught Atlantic salmon when possible.

    The risotto turned out really good. I like to cook, but am definitely not Gordon Ramsey worthy. I screw up dishes occasionally. Usually by applying too much spice.
