are the carbs in sugar free pudding mix anything to worry about while on keto?i know they come from maltodextrin which is a very high GI carb derived from corn that will shoot insulin through the roof... is having a whole box (24 grams carbs) ok? i dont know what i could mix it with though! cant have milk and water wont work i dont think! any suggestions?

24g of carbs is way too much.
Make your own.
Plain sugar-free jello
Mix 1 packet of plain gelatin with half a pint of very hot (just off the boil) water, sweetener to taste and flavour. I like lemon or lime juice, also coffee, and I sometimes use things like stewed rhubarb and cinnamon, or vanilla and ginger. Top up with cold water to pint mark, then chill.
Sugar-free pudding
1 cup cottage cheese,
1 cup cold water
Flavour (2 tsp cocoa powder and sweetener is good)
1 tsp xanthan gum.
Blend the cottage cheese, water and flavour on high until all the curds are gone. Sprinkle in the xanthan gum and blend until it thickens. Decant into pots and chill.
You can also add a scoop of whey to increase the protein.65% fat, 30% protein, 5% carbs = keto.

It's a thickener. It's easier to get than most people realise, as health food shops carry it as a baking ingredient for coeliacs.
However, if you can't get it, there's a recipe for a gelatin-based cottage cheese pudding a couple of threads down.65% fat, 30% protein, 5% carbs = keto.
