Have you tried leg presses? That can support your back and strengthen your knees and quads. Strong quads can help take some of the work off your knees.

I like to deadlift and squat in socks, but I generally wear shoes, since competition requires shoes, and I like to train with the gear I would wear/use in competition.
I try to work it so that I don't have to cut much before a competition (power lifting), mainly because cutting is so difficult for me. I would say eat for energy, muscle buidling, and health.
