Just pick one of the beginner programs and stick to it. As you increase in weight up your caloric and protein intake. If you start not gaining weight then up your caloric/protein intake.
Hi. Go to the nutrition section of the forums and read the sticky about figuring your caloric intake. Also generally you want to take in about a gram of protein per pound of body weight.
Cutting is mainly about running a caloric deficit. Take in less calories. If you are bulking then you are eating more calories required for maintaining your current body weight.

Core exercises will do nothing if it is covered by fat. You can't control where your fat goes when you get it. Do a full body routine for a while. Squats, Deadlifts, Benchpress etc. Read the stickies.
