Egg Muffins
Make these hand muffins for either enjoying your breakfast at your home or carrying them along with you.
Ingredients (4 servings)
• 6 eggs
• Finely chopped 1 – 2 scallions
• 4 – 8 thin slices of cooked bacon or salami or air-dried chorizo
• 3½ oz. shredded cheese
• 1 Tbsp. red or green pesto (optional)
• Pepper and salt
Instructions
• Preheat the oven to 175°C or 350oF
• Then Chop bacon and spring onion.
• Mix eggs with pesto and seasoning and whisk it. Gradually add cheese and stir it.
• Add chorizo, bacon, and salami to the muffin form and then place the batter in it.
• Depending upon the size of the muffin, bake the batter for 15 to 20 minutes.
• To make it keto you can add more fat to it. You can add some more butter to make it keto.
