I chose to play as female in Cyberpunk because male character look so bland with the clothing options in that game, you're almost stuck with a biker jacket, meanwhile if you play as female there's so many options and my character looks like a cool chick supermodel

First off trying to define what adults should be doing to make themselves more adult is what teenagers do and it's a sign of arrested development. Second you are really trying to read way too deep into your own prejudices as to why anyone would want to play as a character resembling themselves.
I think a perfect game to explain why I like that is Forza Horizon 4. In that game you can choose your avatar character to be whatever you want them to be, and you pretty much only see them sitting in the car in 3'rd person or you just see their hands and part of their arms or legs when you are in first person. They have no dialogue and no personality, it's just who you have driving the car which is you and that's all there really is to it. When I am playing this game I am just driving these cars and the character only exists as a representation of myself. There is no power fantasy bullchit going on here or any of your bullchit beliefs, I am just trying to drive a car and I want my character to resemble myself because it is me who is driving it and that helps with the immersion.
If you are trying to be someone else, well it sounds like you are the one who is trying to fulfill another desire.

I remember during one of the Cyberpunk 2077 gameplay videos where they had the main character and Jackie are the only two people in an elevator. Suddenly, I hear this female voice and immediately think, "who the hell is talking if there are only two people in the elevat-[i]ooohhhh...[/i]"
The literal perspective you're put into can really make a huge difference, but like in your example when there's remotely any role playing aspect to the game I'd say it's multitudes more difficult to play as the opposite sex because of how different the more figurative perspectives are. As men, we have a better understanding of how a man would think or act; it's pretty much common sense.
Maybe it's a personal quibble, but I also can't stand the way [i]modern[/i] characters are sort of written not for the story [i]necessarily[/i], rather the gameplay itself. There's like this trend that is more pronounced with female protagonists where the writers feel as though they [i]have[/i] to make this character never shut-the-fukk-up in the middle of general gameplay, [i]always[/i] talking to themselves and self-monologuing.
Maybe it's because women are more "emotional" or whatever it is they're trying to convey, or they're desperately trying to get us to "connect" with this character and her emotions... but no. No, I couldn't give less of a sh*t about what they're thinking or feeling, I'm not more immersed in the world or the story, I'm just distracted by the fact that our protagonist lacks the self-awareness to shut the hell up for once in her godforsaken life because she's going to get ganked.
All I know is that it's having the opposite effect because I certainly liked the more silent protagonists. Sure, I get that they developers blew a bunch of money on voice actors, but I [i]seriously[/i] couldn't give a damn about characters dictating their dear diary entries.
