rack pulls vs deadlifts lat development

I heard deadlifts build lats but do rackpulls build lats too? all pin heights? I do all heights for progressive range of motion. Rapid strength decrease

I stopped going to the gym for about a week, and ate bad foods/ not enough. Pull ups went down to 11, was at 16. Push ups were at 20! when I had 63. But if I start training again I will get those numbers back easily. But why so rapid if I stop? Muscle still looks the same maybe a little smaller.
