Diet Soda, insulin, intermittent fasting (what the hell)

I'm trying IF to control my appetite closer to bed time. I heard some Dr on youtube say I can't drink my diet caffeine free dew because the aspartame will spike my insulin. What the hell does insulin have to do with any of this? Does that matter on any level?
