How much of a calorie deficit

Hey, I’m not quite ready to diet down yet, but when the time comes would it be a dumb idea to stick to a 250 calorie deficit instead of a 500, in hopes of continuing to put on a little muscle while still losing fat. or is it better to just stick to the typical 500cal deficit.

Have any of you been able to eat a small calorie surplus or leak bulk and go from for example - 20 percent body fat at 180 pounds to 20 percent body fat at 200 pounds which would mean you gained muscle and Lowered your body fat at the same time?
