Diet after rest day and before evening workout

Hi, After workout, I try to eat right amount of protein (1.5g/kg) along with other nutrients. But after rest day and the evening workout, should my diet contain as much protein ( 25 gm per meal) just like my after workout meals or should it contain more carbs to prep body for evening workout?

Once you've met your daily req for proteins/fats the guides say fill the remaining calories with carbs/what you want. Does it matter if you add more fats on? Like say daily fat was 60g, if you had an extra 30 or so with the remaining cals?
