simple healthy meals and snacks please

So i'm a kid, right? and sometimes my mom doesn't always understand that i want to follow a more strict nutrition. Im also not a great cook, and she won't cook for me unless its dinner. What are some snacks and things for breakfast that are good for me.

Calorie increase

was eating way below my maintance, so upped calories by about 600 per day, but didn't ease into it. Will increasing this quick cause excess fat storage?
