Should I stick with the program or try something else

Background. 44 yo, 6'8" 270lbs. T2 diabetic. Been lifting for 8 months. Starting Strength for 3 months then Fierce 5. I eat a lot but have to watch due to the diabetes. I have read about DOMS (delayed onset muscle soreness) but what i am interested in is delayed fatigue. I am 46 going on 47 this year and recently I been experiencing fatigue only after 36-40 hours or more. for example I worked out on Tuesday and Wednesday, and Thursday, my rest day I felt fine....
