Protein from soy

I heard soy has some estrogen, so I'm a little concerned because it takes up an important part of my intake (30g, maybe 45g). It's the single cheapest protein food over here next to eggs. We don't have fancy greek yogurt and all that.

Rest between sets, how long?

I'm new to lifting. How long should I rest between sets? I know everyone says between 30-90secs to up to 2-5 mins depending on exercise/goals. I'm of the mindset that I should begin the next set when my muscles feel ready (i.e. lactic acid subsides perhaps?). I don't know, help me out.
