Is this low GI, or does it have to say 100% stone ground?

Yes, it's low GI, and having it stone ground is better.

More importantly, does it have any High Fructose Corn Syrup? Is it UNenriched wheat flour?

Try to find some Ezekiel bread - comes in original (sprouted whole grain) and cinnamon raisin. No HFCS. Their website is www.food-for-life.com

Depending on how high up the list the HFCS is. If it is in the top 10 ingredients listed look for another brand.

If it says whole wheat flour you are ok there.

I will say it is not easy finding a good bread in a grocery store. :(

my theory for any food is the less the ingredients the better.

I like Alvarado Street Bakery. Organic, whole grain, natural ingredients.

Here's their Sprouted Whole Wheat (w/ingredients):
http://www.alvaradostreetbakery.com/Merchant2/merchant.mvc?Screen=PROD&Product_Code=10220&Category_Code=bread

They have an excellent FAQ page (good reading):
http://www.alvaradostreetbakery.com/faq_asb.html

They even have internet orders:
"We ship everything fresh, directly from our bakery to your doorstep. Due to the nature of our products, and the fact that we do not use any preservatives, we only ship on Mondays so that the order reaches you within 1-3 days and doesn't get stuck at some warehouse over a weekend. All orders placed by Saturday 2 PM will be shipped the following Monday. Once your order has arrived, it can be frozen and will keep well for many months."

I just get mine at my local co-op. :)

I second this--I find it very tasty and guilt free if eaten in moderation.
