View Full Version : Steak Fajita Salad

So I tested this out yesterday. Wow it was sooo good. I recommend to everyone. You can get about 4 salads from what you cook.


1/4 Cup Vegetable Oil
1 Garlic Clove
1 Teaspoon Ground Cumin
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
3 Tablespoons Lemon Juice
Dash of Hot Sauce
Salt and pepper
1.5 Lbs of Steak (Skirt steak works well)
1 Medium Onion
2 Medium Peppers of choice
Cheddar Cheese
Low-Carb Salsa
Sour Cream
Jalapeno Peppers

Take large plastic bag. Put 2 Tbsp of Oil, Minced Garlic Clove, Cumin, Garlic Powder, Onion Powder, Lemon Juice, Dash of Hot Sauce, Salt and Pepper. Add 1.5 lbs of Steak. Let marinade for at least 1 hour. I did 6 hours and it was perfect.

Get your grill or grill pan to medium-high heat. Place the steak on grill. Cook to preference. I like going medium rare. I did not use skirt steak. I used thick strip steaks. They took about 6 minutes a side for medium rare. Skirt steak should take 2-3 minutes a side since they are much smaller.

Now cut your 2 peppers and onions. Heat 2 Tbsp of Vegetable Oil in a skillet. Put in your peppers and onions. Cook to your liking. I usually leave them some what crispy and don't let the onions brown. Add Salt and Pepper to taste.

Now to making the salad:
1/4 Cup Cheddar Cheese
2 Tbsp Sour Cream
4-6 OZ of Steak sliced into strips
Peppers and onions (I used about 1/4 because these aren't the best on Keto)
1 Jalapano - Chopped (optional - I added for spice)

Take all of these ingredients and mix into a large bowl or tupperware.
