This meatloaf recipe is the most delicious meatloaf I have ever eaten, the problem is that it has bread crumbs, onions and peppers. What could I substitute the carb rich ingredients with? I think that I could just scale back the onion and pepper, but I need something that will hold the loaf together in place of bread crumbs; thanks Eileen.

2 teaspoons butter
3/4 pound ground beef
1/4 pound ground pork
1 cup minced onions
1/2 cup green bell peppers
1 tablespoon chopped garlic
2 eggs
1/2 cup heavy cream
3/4 to 1 cup bread crumbs
Salt and freshly ground black pepper
2 cups veal or beef stock
2 tablespoons all-purpose flour
2 tablespoons water

All you need to do is cut back on the onions, and substitue crushed pork rhinds for the bread crumbs. Id also get rid of the flour, maybe use a bit of egg instead.

Porks rinds would be awesome, thanks! The flour is to make the gravy, I forgot to post cooking instructions.
