View Full Version : Spinach Cheddar Quiche

crust:
3/4 cup almonds
1 cup oatmeal (i used 1 pack of instant stuff)
2tbsp butter
blend all together in a food processor, set in the pan you'll be using and bake at 325 for 10 minutes before adding filling

spinach: saute roughly 5oz of chopped spinach greens in olive oil until soft (usually pretty quick)

filling:
4 eggs (beaten)
2 cups grated cheddar
5oz sauteed spinach
1 cup heavy cream
1/2 cup cottage cheese
1/2 tsp salt
1/4 tsp paprika
bacon bits/parmasan cheese sprinkled over top

after beating eggs, mix all other ingredients together before pouring into pie pan. top quiche with bacon bits and parmasan before allowing to bake for 45 min at 375 degrees.

i realize the oatmeal isnt keto friendly but i figured you wouldnt get more than like 5g carbs per small slice, next time im going to try almonds and flax meal. i read a bunch of recipes online then sort of threw this all together according to what seemed right when i got in the kitchen, it turned out DELICIOUS, maybe ill post a pic later.

fair warning: this tastes really really good and i ended up eating half of mine already, good thing i did that extra 1.5 hr bike ride today.

I made a few changes to the recipe to make this more keto friendly.

The first change was to the crust
this time i used 1c Almonds, 3 Tbsp butter, 2 Tbsp splenda and no oatmeal.
im guessing that helped get rid of about 30g of carbs
the new crust tastes great and the extra sweetness from the splenda works well.

as far as the actual filling...
instead of using 1c heavy cream and 1/2 c cottage cheese i switched to
1c cottage cheese and 1/2c heavy cream. although this is not better as far as carb count goes it makes a pretty big difference in calories
1/2c heavy cream = 400 cals
1/2c cottage cheese = 120 cals

i also added extra spinach and some feta cheese as a topping.
