View Full Version : Keto Falafel (perfect bite size snack)

So today I was feeling creative and decided to make falafel.

It came out really good, with good fiber:
1.25 c soybeans, dry (can be found in bulk section at health food store)
.5 c green lentils
1 tbsp cumin (or more to taste)
1/2 c hot water
1 tbsp parsley
1 tsp cilantro
.5 small onion
1 lg green onion
10 tbsp flaxmeal
salt & pepper to taste
1.5 c oil (I used grapeseed & sesame)

soak dry beans overnight (or rapid boil)
in a food processor, process onions until pureed. Add drained beans & water and process but make sure they are not pureed. You want it to have a nutty texture.

In a large bowl, put pureed mixture in with herbs, salt and pepper. Mix in flaxmeal 1 tablespoon at a time.

Heat oil in a heavy sauce pan (or use a fry daddy). When oil is piping hot, drop in small, tablespoon sized balls of mixture into the oil (use measuring tablespoon to ensure they are all the same size) . turn while cooking until evenly browned.

Yields about 36 falafel. Eat on greek style salad, or drizzle with tahini and munch.

(12g carbs, 8.5g fiber)
9g protein

(fat macros might be off, hard to tell when deep frying)
