Does flax seed oil slow down the absorbtion of simple sugars? If so then it wouldnt be best to take flax seed oil post workout or before bed. Is that correct?

true, it does slow absorbtion and is no good PWO but it is good to have before bed.

But when we sleep we recover. So isnt a faster simple sugar absorbtion best?

Since we are not getting any nutrition during sleep, you want to eat food before bed that will digest slowly throughout the night. The best way to do this is by having casein protein(dairy) and healthy fats.

having some low glycemic carbs before bed wont hurt you. this could possibly be the worst time for simple sugars. low GI carbs include fiber which will slow down absorption and keep you in an anabolic state longer throughout your sleep cycle. healthy fats are a good idea too as mentioned above.

if cutting, is it a bad idea to take in food prior to sleep?

not at all, its a good idea to be anabolic for as long as possible during sleep. even though im against low carbs in any meals, you might just want to take in some cottage cheese or just a casein shake before bed. an apple or a tbsp of pb would be fine also depending on your calorie intake for the day.
