im currently bulking and im not sure what my diet should be like on a non-lifting day

Same as your lifting days.

Don't deprive your body of the nutrients it needs when it's trying to recover from the abuse you put it through in the previous days.

Same as normal without the post work out shake. Your body is in repair mode some even up the calories a bit on off days to give them a boost for the next training cycle
