View Full Version : Crispy Parmesan Chicken

You need for one (Multiply for bigger portions)

1 chicken breast sliced into thin strips
1 egg white whisked until fluffy
grated parmesan
pepper
dried herbs (I used oregano)

Dip chicken slices in egg white
Mix the parmesan with the pepper and herbs
Dip th eggy chicken into the parmesan mixture pressing in until well coated

Put the chicken onto a greased or non-stick baking tray and bake at 200 (my hottest oven setting) for 20 mins until well browned and crisp.

They may take some prising off the tray but they are well worth it - really crispy and tasty. Next time I'm going to add some sesame seeds.

Serve with mayonnaise to dip into
