hi guys, will frying food with good fats like olive oil change the quality of the oil? if so what type of unsaturated fats are good for frying? any advise on cooking food? thanks.

It will only affect the quality if you heat it past its smoking point, otherwise you're good to go. However, saturated fats have a higher smoking point and are generally better for frying.

I just use extra virgin olive oil (EVOO) as my unsaturated oil, and once in a while lard 4 saturated. Those 2 pretty well cover my needs.

so can you please tell me how i can incorporate saturated fats in my diet? i always thought saturated fats are bad.
