This recipe is great for those who are keto bulking

ingredients: 3 cups whipping cream, divided
4 egg yolks, lightly beaten
1 tablespoon coffee granules
1/2 cup plus 2 tablespoons of splenda granular , divided
1/2 teaspoon vanilla extract
12 cup chopped walnuts or pecans

1. pour 2 cups of cream into a medium saucepan. Whisk egg yolks and coffee granules into cream. Heat 10 minutes over low heat, stirring constantly. until mixture reacher 160F. Mixture will thicken as it cooks

1. pour mixture into bowl, stir in 1/2 cup splenda until well blended. refrigirate 2 to 3 hours or until cold/ Pour chilled mixture into ice cream maker. *if you dont have an ice cream maker , then just use a freezer.

3. whip remaining 1 cup cream, 2 tablespoons sugar substitute and vanilla until stiff. scooop ice cream into serving bowls and topped with whipped cream. sprinklle nuts just before serving

makes 4 serving. about 5 net carbs per serving

This sounds great, plus it uses up egg yolks.
