View Full Version : Broc**** and Stilton Soup

Ingredients
2 tbsp olive oil
1 clove garlic, chopped
half onion, sliced
30g/1oz butter
1 handful grated potato
290ml/half pint vegetable stock
half head broc****, chopped
75g/3oz stilton, cubed
85ml/3fl oz double cream
1 tsp thyme, chopped

Method
1. Saut? the garlic and onion in the butter and oil for 2-3 minutes.
2. Add the potato and stock and simmer for 7-8 minutes until the potato is tender.
3. Add all the other ingredients and simmer for 2-3 minutes.
4. Blend the soup in a food processor.
5. Pour into a bowl and serve.

Do you guys reckon this soup would be OK for Keto without the potatoes? Sounds really nice!

Great recipe - deffo ditch the potato and add a bit of cauliflower instead.
