You can use whatever cut of chicken you want for this recipe with or without skin, whether it is traditional wings & drummies or chicken breast. You can buy the packages of wings & drums(just make sure they aren't breaded) or use some chicken pieces like thighs, strips, or breasts.Once you have coated the chicken with the sauce just bake, broil, or grill until cooked like you normally would. I like to add a little more sauce just before they are done. Anyway, on to the sauce & Blue Cheese

Buffalo sauce:
2 Tbsp. butter melted
2-3 Tbsp. tabasco sauce (Use more or less to taste)
1/4 tsp. salt
1/4 - 1/2 tsp. cayenne pepper (again, more or less to taste)
2 tsp. paprika

Just mix it all together, coat the chicken, and cook. If you like alot of sauce you might want to double the recipe.

Blue Cheese dressing:
Use a blender or food processor to combine the following ingredients:
1/2 cup full fat sour cream
1/2 cup full fat mayo
1/2 cup crumbled blue cheese
1 Tbsp. white wine vinegar (any light or clear vinegar will do)
1/2 tsp. garlic powder (not garlic salt)
just blend until smooth

Or you can have your wings with Ranch dressing if you prefer. I like both and have both sometimes.
