I have been drinking instant coffee but I want to switch to fresh beans. What kind of coffee beans are the healthiest? Why do some people refrigerate them? Is this true? The caffeine in coffee blocks a chemical called adenosine that otherwise interferes with energy-boosting neurotransmitters. And the instant coffee goes through a chlorine adding process what can be damaging to the body? A cup of fresh coffee a day is full of antioxidants and raises basal metabolic rate?

Medium roast is going to be better since dark roast destroys many the antioxidants. Using a filter can get rid of some of the lipids/oils in the coffee.
