View Full Version : Roasted Almond Butter

1 cup whole raw almonds (unblanched = more fiber)
4 tsp canola oil
3 packets of splenda
1/2 tsp of salt (to taste)

preheat oven to 300
roast almonds for 20 minutes
combine all ingredients in food processor

add cinnamon or vanilla extract for additional flavor

ive been having a PB craving and decided to try this healthy treat,
man its good im worried i might eat too much ;]

In the past few days i have attempted this with both walnuts and macadamia nuts. The taste is great but the consistency of both were off. My walnuts came chopped so there were more in a cup which caused it to be more of a solid than the almond butter. I think i added too much oil to my macadamia blend which caused it to be a lot more liquidy that i expected. Either way... all 3 concoctions taste delicious, and i dont even like eating almonds or walnuts.

Do you just eat it straight, or on something?

with the splenda its pretty sweet so you can just eat it straight
(ive tried someone else's unsweetened version and thats a bit too hardcore for me)

my fav way to eat it is to throw it in the microwave for like 45 seconds and cover it in whipped cream.. healthy keto dessert FTW

If it's chopped, I'd throw it into the blender for a minute to reduce it to a finer texture. Or just grind it by hand with a pestle. I do that with peanut all the time.
