Just curious, but why does everyone use olive oil in all their sweet recipes? Why not vegetable oil? Doesn't it ruin the taste? I know it did for me when I mixed up the oils when baking cookies once.

yeah i want to know too! i know people use extra virgin olive oil because its one of the healthiest oils to have but in my opinion overpowers the taste in a lot of cooking!

other oils seem like it would be better!

I get enough of olive oil in salads, will try this with regular butter.

just made these with SciVation vanilla whey and virgin coconut oil. They're pretty good but i think they needed about another minute in the oven since the center-top didnt cook all the way.
My counts came out to just under 100 cals per muffin with 8.4g F, .25g C, 5.4g P. Also it made 10 muffins for me so that's why my macros are lower.
