i've read a few posts about avoiding foods with nitrate. why is that? how is it bad?

Probably because it's poisonous in higher amounts. However, its very RARE to get nitrate poisoning from foods. It's more common getting it if drinking contaminated water.

Nitrates are often used in pesticides, so it's a good idea to try and avoid them entirely, but that's not always possible. In lower amounts (From eating regular foods), your liver and kidneys remove the nitrates from your body without harm.

I'm very allergic to certain nitrates and MSG. The ones I am most allergic to are usually found is processed meats, chips, canned food, and packaged food. They are also found in red wine I believe.

It does not really matter for me because I don't eat any of these things.

Basically just stay away from crap food like the ones I mentioned and you should be fine.
