A bunch of different sodium free mrs dash mixtures, for chicken, steak, etc. And curry powder for chicken, and i'm also a huge fan of plain old pepper for a lot of things. Chili powder for the rare occasions that I bust out the slow cooker and want a good spicy chili. I use cinnamon a lot for oats/shakes. Cilantro goes into any home made salsa that I do. Lemon pepper for fish/chicken. That probably covers it for me (I'm not entirely creative).

I have tons of those little red containers of spices and even more large shakers of custom premixed spices. Here are some examples:

Jamaican Jerk chili powder, garlic, thyme, cinnamon, ginger
Curry - coriander, cumin, pepper, turmeric, ginger, celery seed, fennel
Beef Rub garlic, onion, pepper, thyme
Salmon Rub paprika, cumin, garlic, celery seed, oregano

curry powder

damn, you beat me to the emeril's essence ...

you can buy the 'variety' pack, though.

it has original, southwestern, asian, and italian.

i also use ground red pepper, lemon pepper, ground ginger, garlic, pepper (no salt though) ground allspice, cinnamon, nutmeg, parsley, chives, oregano, terragon, rosemary, thyme ... i have a large spice rack. i know i'm forgetting some.

Sage (growing in the back yard)- great for chicken, turkey, and pork

Rosemary- good on chicken and pork

Basil- good with anything tomato based, pastas, or herb bread

Marjoram- good with eggs

Chives (growing in the back yard, and also dried)- adds a mild onion-like flavor to foods: great in eggs, mixed vegetables, chicken salad, and tuna salad

Thyme- a "flavor blender" herb, it's good with just about anything. Particularly good with cruciferous vegetables (all the "cabbage" family.)

Caraway seed- also very good with cruciferous vegetables

Nutmeg- buy it whole, and grate it as needed. Excellent in oatmeal, fruits, and, strangely enough, cooked onions

Cinnamon- essential for oatmeal, and for the rare treat of homemade cinnamon bread or french toast

Cumin seed- good in black bean salsa, or anything where a taco-like seasoning is desired

Other spices/herbs I keep on hand: ginger, whole cloves, whole allspice, oregano, tarragon, and garlic.
