When I brined my chicken I used: soy sauce, honey, salt, and then spices. I forgot to wash off the chicken before cooking after taking it out of the container which I brined it in. Do you think the cooked chicken absorbed all the sugar from all the honey i used which would make it a lot more unhealthy since I forgot to wash it off???

No, any excess salt or sugar is negligible. If anything the excess sugar will cause the chicken to brown nicely. Often brined chicken comes out looking 'grey' and while it does not effect taste can predispose some to less pleasurable experience. Enjoy your chicken!
