hey...me and my boyfriend have been arguing over what is more effective:

Doing the same cardio(eliptical trainer), day in day out...say for 1hr at a time, but using different resistances

OR

Doing different cardio routines and mixing it up a little, but for the same duration

I've hit a plateau and he said it doesn't matter about the cardio, my body will keep burning the same amount of fat, but i think that doing different cardio for the same amount of time, just mixing it up, might shock my body a little and get it going again? Any opinions?

Cardio adaption....Yes, you can adapt. Your body is designed for survival and will adapt quickly.

You will get noticable results in the beginning by keeping it the same, but after 6-8 weeks...Boom..plateau. Time to mix it up. You can change cardio around by mixing the intensity, time, duration, choice of exercie, HIIT, etc.
