If i know that im not gonna eat for a while (possibly 4 hours or a little bit longer)....would it be wise to eat slow digesting proteins (casein or cottage cheese) for my meal before (which is lunch).....or should i just stick to my normal lunch of a tuna or chicken sandwich?

I don't think 4 hours is that bad. I would go for either of the three.

I think tuna and chicken are also reasonably slow digesting proteins. I agree that anything you mentioned should be fine.
