I was wondering what the results would be life if I track my protein and total calories during my bulk, would this ensure good results.

Maybe; it would make adjusting intake based on weight gain easier.

Adjusting carbs and fats is really hard too being that I am a college student. I want to be consistent, but don't want to stress too hard.

That's fine. Heck, many people don't even track at all and get good results.

You could also just go by scale, as long as you're gaining ~2 pounds per month you're fine.
