I have School, Work, Then i go to the gym. I have time for 2 meals before the gym and 1 after but that isnt until 11:30pm so i try to just eat cottage cheese and a chicken breast nothing huge. What are some ways to get into 3,000k calories a day. I'm having a hell of a time getting above 2,300. Any calorie dense and low fat food suggestions would be great. I know the Double up method but I cant afford that much food a week with my income with my supplements. my macros on average are:

Protein: 225g
Carbs: 200g
Fat: 65g

Why low fat? Peanut butter, trail mix, nuts, full fat yogurt, cheese, milk, ect are all very easy calorie sources.

^ agreed, I would go for fats if you're looking for a calorie dense option. Rice and Pasta is another option, about 2 oz (depending o which brand you get) of pasta has 210 calories

This is your problem. Those are good cutting foods but not particularly great for bulking due to their low calorie density.

Whenever you have options to purchase a higher-fat item. I'd just do that. Like, you can easily make a shake with Whole Milk, Oats, Peanut Butter, and protein powder for about $1 per serving and around 1,000 calories. 2 cups of whole milk is about 300 calories alone. Almost all dairy products offer a higher percentage of fat version, so opt for that! :)
